Spiced Beef is a Cork delicacy, a beef joint cured with a delicious blend of spices. Lavinia recommends cooking your spiced beef the evening before you want it! Remove all packaging before cooking. Cook in a slow cooker on low for 8hrs, leave in the pot overnight. If you don’t have a slow cooker, cook the spiced beef in a large pot of water. Bring to the boil and then reduce the heat, simmer for at least 50mins/kg. Maybe give it 2hrs to be sure! Leave it in the pot overnight to soak back up the flavour!! Slice up the amount you want for dinner and gently warm in a the microwave or cover in tinfoil and heat it up in the oven. Enjoy the rest cold in sandwiches or salads.
